"MIP" stands for "minimum ionizing particle". A common example of a minimum ionizing particle is the muon. The energy loss for a minimum ionizing particle per unit path length is small, typically a few MeV per unit cm material. Hence, the unit "MIP" refers to this several MeV per cm small energy deposit.
